Sauce that runs in the pack, gluten-free dough that falls apart and dairy that releases whey are viscosity and water-retention failures — not flavor problems. Guar Gum is a galactomannan (INS 412) extracted from the endosperm of Cyamopsis tetragonoloba seed: a linear mannose backbone with galactose side chains that hydrates in cold water and raises viscosity at low dosage. It works as thickener, stabilizer and moisture-retention agent, with pseudoplastic behavior and a well-known synergy with xanthan gum for firmer body. Supplied as a high-purity powder with traceable lots and technical support on viscosity grade and dosage for foods, pet food and waterborne industrial formulations.
